Today we made a start on pruning 14 hectares of vines, pruning is the first action we take to our future vintage. Allowing organic growth, Simonit & Sirch’s guyot method is key to the longevity of our vines, prevention of disease whilst respecting vascular flow through the structure of the vines. SHAPING THE STRUCTURE: The first goal of the Method is driving the branching development respecting vine’s organic growth. The cuts were covered with propolis wax from our hives to protect the vines from any disease.
2 RESPECTING VASCULAR FLOW
TROUGH THE STRUCTURE OF THE PLANT: The second assumption concerns the continuity of the sap flow trough the structure of the plant, separating desiccated areas from the main vascular flow.
3 CUTS AND CROWNS
REDUCING CUTTING SURFACES AND RESPECTING THE CROWNS: Small cuts, on the same side and acted upon one or two years old wood. A precision pruning greatly reduces the area of the wound exposed, thus the risk of wood disease.
4 PROTECTIVE WOOD
A FURTHER DEFENSE FOR THE PLANT : Pruning must allow for a portion of protective wood when cutting on two years old wood:
